When following a low carb/high fat diet, chicken is one of your most versatile ingredients. You can adapt almost any recipe to be low-carb. Chicken lends itself well to added fat you want to include in order to get your fats in. Chicken can also be cooked by a variety of methods, which makes it very appealing. I’ve rounded up some of my favorite recipes for you here.
Garlic Lime Skillet Chicken
This is one of my favorite recipes. I like the spicy flavor of the jalapeno for a change of pace.
Cheesy Ranch Chicken
This is a very easy recipe with just 4 ingredients. Even the toughest-to-please kids love this flavor combo.
Creamy Ranch Slow Cooker Chicken
Who likes ranch dressing? Who likes cream cheese? Who likes easy? Everyone, that’s who.
Low Carb Chicken Tenders
Easy as pie – well, really baked chicken tenders. Parmesan cheese and a few spices make the crunch coating on these babies. Kid love these!
Low Carb Artichoke Chicken Casserole
Another super easy recipe. This one is a little more savory.
Ranch Chicken Bacon Kabobs
I love the taste of ranch in this recipe. These grill up super quick and are impressive looking.
Skillet Chicken With Lemon Cream Sauce
This easy one skillet chicken dish has a creamy garlic lemon sauce. This just takes 30 minutes to make and serves 4. Well, in my house it serves 2 because my husband always has to eat 2 servings of everything. He’s not obese, he’s just tall and kind of large. Lucky for him, he’s tall. I’ve made this a few times and it’s in my list of go-tos. I am collecting so many great recipes and really enjoy cooking again.
Low Carb Chicken Divan
This low carb chicken divan is more of a savory dish and not so rich. I used to make a version of chicken divan with stuffing in it. Can’t do that anymore… so I am happy I found this recipe.
These are some of my favorite low-carb chicken recipes. I had thought that eating low-carb meant that I had to eat boring meals all the time. I couldn’t have been more wrong. Since I love chicken, these have been a lifesaver.
