Low Carb Key Lime Cheesecake
When I found this recipe from Jenn Dempsey – Mother Thyme, I was beyond thrilled. I’m even more thrilled now that I’ve tried it. My husband and I spend winter in the Florida Keys and believe me when I say that key lime pie is everywhere. I cannot indulge in traditional key lime pie, so I make this version and keep it in the fridge. Even my husband has forgone the original and really likes this version.
